Before the offsets, learning the basics was developed on pellet smokers, going from household model to a more commercial version, before venturing into live fire. These smokers developed our ability to understand the process with the limited time we had. These smokers still create a great product but it cannot compare to the offset, horses for courses though without them we wouldn't have moved forward.
The 1st Offset out of the collection, this smoker was purchased from smokey oak barbecue, a small independent pit maker based in the south of England. This was the introduction into stick burning and a great pit. The boys who developed this really put time and effort into thinking about how the pit runs and that combined with great fabrication created a stellar product.
This 250 loaned out by ProSmoke whilst we awaited the arrival of the 500 was made by Shirley fabrication in the US.
Obviously the home of BBQ is going to produce some great pits and this certainly did. Incredible build quality this is a workhorse and we put it through its paces.
Our current Smoker is a 500 gallon by Primitive, another US based product, these guys have been about and made pits for some of the best BBQ joints in the world. It cooks like a dream and has a larger baffle on the firebox to allow more cooking all over the grates. Bascially every inch inside the smoker can be used, when cooking with a decent coal bed.
